Meet Jessica!


Jessica is an outstanding person who runs an amazing blog. There she shares recipes and so many more resources that incorporate a gluten free lifestyle! We are so excited to share this interview with you because we want everyone to know why she is such an inspirational VEP!

Q: So tell me a little about yourself! 

A: My name is Jessica. I run the gluten free blog Tasty Meditation, and as of January I will be the lead organizer of the NYC Celiac Disease Meetup Group, the largest gluten free Meetup group in the country. Also a certified yoga instructor, I have been teaching yoga and fitness classes in NYC and Colorado for almost a decade.

Q: What inspired you to start your blog?

When I was first diagnosed with Celiac Disease I received a great deal of help and support through the online community. I quickly became my doctor’s star patient and wanted to find a way to give back to the community. My blog was born, and I began volunteering with the Meetup group.

Q: What is one valuable thing you’ve learned from blogging?

I see more and more how strong the gluten free community is. I’ve never seen another group like it – the camaraderie! We meet someone else who has Celiac Disease, and there is an instant connection and empathy. It’s wonderful.

Q: What is your favorite healthy recipe to make when cooking for friends or family?

I love to make vegetable stir fry dishes with a little coconut oil and plenty of onion, garlic, red bell peppers, and kale – the more vegetables the better!

Q: If you could travel anywhere in the world, where would it be?

My dream is to visit Italy. My family is Italian. I would love to experience the culture and take a few cooking classes with local chefs.

Q: What do you love most about ENLIGHTENED products?

Enlightened Crisps are an incredibly tasty and satisfying snack. They are packed with protein, which can sometimes be hard for me to get enough of as I run from one yoga class to another.

A: Both, but at different times. I often have salads for breakfast and omelets for dinner.

A: Sweet! (especially if chocolate is involved)

A: Baking

A: Summer: night out. Winter: night in.
