We absolutely adore sweet potatoes! They're sweet, savory, buttery and healthy all at the same time! The best thing about sweet potatoes is they make the perfect vehicle for so many other delicious healthy toppings, like our ENLIGHTENED Roasted Broad Bean Crisps!


If you want something super simple, try the buttery, crunchy combination of avocado and Sea Salt Crisps. It's such a symphony of flavors, even with only three ingredients! But if you really wanna get crazy:

The addition of sweet corn and your favorite healthy buffalo sauce will really kick up the flavor explosion! (We put buffalo sauce on basically EVERYthing, so of course we love this healthy recipe!)


Switching over from Sea Salt to our Wasabi Crisps is a great decision if you like a little punch to your sweet potato. Toss in our Bean Salad (recipe below) with a little avocado and you've got the best appetizer on the planet!

(Sweet and Spicy!) Corn and Avocado

● ½ sweet potato, cooked

● ENLIGHTENED Sea Salt Crisps

● Sweet corn

● Avocado

● Buffalo sauce


(Creamy and Crunchy!) Bean and Avocado

● ½ sweet potato, cooked

● ENLIGHTENED Wasabi Crisps

● Bean salad (chickpeas, pinto beans, and red beans tossed in olive oil and apple cider

vinegar with salt, pepper, and freshly chopped parsley)

● Avocado



1. Cook 1 sweet potato according to your liking - just be sure to leave the skin on. Cut it in

half widthwise, then in half lengthwise.

2. Take the warm potato and mash the inside slightly with a fork.

3. Layer on the toppings, then dig in!
