Veggie Crisps n' Dip Stuffed Peppers | ENLIGHTENED Recipes

Recipe

Ingredients:

(serves 1-2)
  • mini peppers
  • 1/4 cup plain greek yogurt
  • 1 teaspoon mayo
  • 1/4 cup chopped kale and spinach
  • 2 tablespoons chopped red onions
  • 1/4 tsp garlic powder
  • salt and pepper, to taste
  • Sea Salt Crisps

Directions:

  1. Slice the tops off of the peppers, slice in half lengthwise, and remove the seeds
  2. Combine the remaining ingredients (except the Crisps) in a bowl, stir to combine
  3. Fill each half of the peppers with dip, then top with Crisps
  4. Enjoy!
