Cure the Sunday scaries with this awesome Mint Chip Brownie Sundae!! This recipe is so chocolatey & refreshing, you might just have to add an extra scoop or two to make it last longer.
Everyone enjoys a good brownie, but these brownies are EXTRA special because they are super delicious and use healthier alternatives like cocoa powder and almond flour. Adding in chocolate chips is optional, but highly recommended.
Simply combine all the ingredients in a bowl, mix them together, and then pop it into a pan and bake for 20 minutes! We recommend letting our Mint Chocolate Chip Ice Cream sit and soften for about 10-15 minutes before serving, that way it's the perfect creamy texture to top your brownie with.

- 5 tbsp. Butter, softened
- ¼ cup sugar
- ¼ + 2 tbsp. unsweetened cocoa powder
- ¼ tsp. sea salt
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- 1 egg
- 1/3 cup almond flour
- 1/3 cup mini chocolate chips
- 1 scoop of ENLIGHTENED Mint Chocolate Chip
- Preheat oven to 350 F.
- Combine all ingredients, then add to a medium/small baking dish.
- Bake 20 minutes, then let cool before slicing.
- Add a brownie to a bowl, then top with ice cream. Enjoy!
